Ingredients:

  • 3-4 pounds bone-in beef short ribs
  • 1 TBSP Mild EVOO
  • 15 oz can Diced Tomatoes
  • 1/2 cup Fig Dark Balsamic
  • 6 cloves of Garlic, smashed

 

Spice Rub:

  • 1 TBSP Coarse sea salt
  • 1 TBSP Dried Rosemary
  • 1 TBSP Dried Sage
  • 1 TBSP Garlic powder
  • 1 TBSP Onion powder
  • 1 TBSP Paprika
  • 1 TBSP Black Pepper

 

In a small bowl, mix together the spice rub.
 - Rub spice blend into both sides of ribs
 - Heat EVOO in a large skillet over medium-high heat.
- Sear each side of ribs 2-3 minutes.

  • 2 cups Flour 
  • 1 cup Oatmeal
  • 1/2 cup Creamy Peanut Butter
  • 2 TBSP Flax-seed Meal
  • 1 cup Water
  • 1 TBSP Mild Extra Virgin Olive Oil

Preheat oven to 300 F. Add dry ingredients into a bowl, then add olive oil and water. Mix in bowl with a spoon, or mix with hands as dough comes together. Roll into 1- 1 1/2 inch round balls and flatten slightly. Bake 20 minutes. Once done, leave in oven to harden.

This is a very simple and versatile dessert. You can substitute almost any berry and balsamic for the blackberries and cut back on the ginger if you don't like a bit of ginger tang! It is not overly sweet but add 1/4 cup of sugar to batter if you prefer it more sweet.
