Guac!

Ingredients  3 Haas avocados, halved, seeded and peeled 1 lime, juiced 1/2 teaspoon MOOC roasted garlic salt 1/2 teaspoon ground cumin 1/2 teaspoon cayenne 1/2 medium onion, diced 1/2 jalapeno pepper, seeded and minced 2 Roma tomatoes, seeded and diced 1 tablespoon chopped cilantro 1 clove garlic, minced 1 tablespoon lime olive oil In a large bowl place the scooped avocado pulp and lemon juice, toss to coat. Mash avocado, and  add the garlic salt, cumin, and cayenne. Then, fold in the onions, jalapeno, tomatoes, cilantro, and olive oil. Let sit at room temperature for 1 hour and then serve.

Manassas Olive Oil Chili

No Super Bowl Party is complete without some good chili! Lemon Roasted Chicken

Ingredients ~3 ½-lb. chicken quarters 1/4 cup Meyer Lemon Olive Oil 1/4 cup Rosemary Olive Oil 10 cloves garlic, thinly sliced Kosher salt and freshly ground black pepper, to taste Directions Toss the chicken pieces with the olive oil, rosemary, lemon juice, garlic, lemon, and salt and pepper to taste in a bowl. Marinate for about 1 hour. Heat the oven to 450°F. Arrange the chicken in a 9 x 13-inch baking dish and add the remaining marinade. Roast, turning once, until cooked through, 30-40 minutes. Divide chicken between 4 plates and serve.

Slow Rise Olive Oil Bread

There's nothing quite like a fresh loaf of bread. But don't be intimidated, baking bread is actually easy, and it's always a crowd pleaser! Ingredients 1/2 cup warm water (110 degrees F/45 degrees C)  2 1/4 teaspoons active dry yeast  1 teaspoon white sugar  1 teaspoon salt  4 tablespoons varietal EVOO (I used Picual)  2 cups flour (plus 1/2 cup as needed) Instructions In a large bowl mix together the warm water (110 degrees), yeast, sugar, salt, and olive oil.
